Nutrition Challenge update

3rd annual nutrition Challenge standings as of Wednesday night 1/09/2013

This is based on the Pretest scores attendance up untill Wed Night and Meal Journal requests. 

 If you have not been in your allotted times but are planning on it Thursday Friday or Saturday don't worry your scores will be adjusted, If you need to make up the Pretest make sure we set that time up soon. If you have not submitted a meal journal request yet make sure you do it by Saturday to get your point. 
Remember Your final score is based on 5 different areas

Post Test Score 20%
Improvement 40%
attendance 10%
meal journal 10% 
Bringing a friend 5%

So there are still a whole Lot of points to be earned. Every one is looking good so far and hitting it hard. Keep up the good work and keep the questions coming. 

And Finally remember this is a Performace Competition not a weight loss competition. Train eat sleep and focus on PERFORMANCE and every thing else will take care of itself.

Those with the lowest scores currently are those who have not yet requested a review/ attended all their classes or still need to make up the pre-test 

And now to help you guys stick to it here is the first of many Mostly Paleo recipies

Cashew Chicken with Kale

Ingredients

2 tbs your choice of fat (I used coconut oil)
3 shallots, thinly sliced (I didn't include this and it turned out fine)
1 tsp dry ginger
3 cloves of garlic, minced
12 oz chicken breast, cubed
1/4 tsp cayenne pepper
4-6 cups chicken broth
1 can fire roasted tomatoes
3 sweet potatoes, cut into chunks ( I had one large and 2 very small ones. You could use 2 large.)
1 bunch of kale torn into pieces
1/2 cup cashew butter (I used peanut butter)
Salt and pepper to taste
Cashews or peanuts for garnish


Directions

1. Heat oil in skillet. Add shallots and cook until brown and crisp.
2. Add ginger, garlic, cayenne, and chicken.
3. When chicken is cooked through transfer skillet ingredients to a pot. Add chicken broth, tomatoes (include liquid), sweet potatoes, kale, salt, and pepper. Add more chicken broth if needed. Bring to a boil.
4. Add cashew/peanut butter, stir well. Heat the soup until sweet potatoes are soft.
5. Serve with cashew or peanut garnish.
